    Pork Fried Rice 2

    6 oz pork tenderloin
    1/8 tsp five-spice powder
        vegetable cooking spray
    1 1/2 tsp vegetable oil divided (or use broth or nonstick cooking spray)
    1/2 tsp fennel seeds crushed
    1/2 cup broccoli florets fresh, chopped
    1/2 cup sliced mushrooms
    1/4 cup chopped green onions
    1/4 cup shredded carrot
    1 1/2 cup cooked rice hot, cooked
    1 tbl low-sodium soy sauce
    1/8 tsp pepper

    Recipe



    * Trim fat from pork; cut pork into 1/4" cubes. Combine pork and five-spice powder, toss to coat. Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add pork; stir-fry 3 minutes or until browned. Spoon pork into a medium bowl; set aside.

    * Heat 3/4 teaspoon oil in skillet over medium high heat. Add fennel seeds, stir-fry 30 seconds. Add broccoli and next three ingredients, stir-fry 3 minutes. Add vegetable mixture to pork mixture and set aside. Heat remaining 3/4 teaspoon oil in skillet over medium heat. Add rice, stir-fry 2 minutes. Stir in soy sauce and pepper. Return pork-vegetable mixture to skillet; stir-fry until thorough heated.


    * Yield: 3 cups

    * NOTES from another poster:
    Fried rice is an extremely versatile dish. It can be quickly thrown together with leftovers in just a few minutes and it fits in nicely as a snack, side dish or main dish.

    * I've made it with just onions, rice and soy sauce and it was great as a snack.

    * As a main dish it's a super meat stretcher. The recipe I've included only uses six ounces of meat and it serves two. That's stretching a piece of meat a long way.

    * Always use leftover rice for your fried rice. It's best when made that way. The rice doesn't gum up as bad on you. and if you're gonna' use fresh meat as in this recipe you can cut it up much better if you'll put it in the freezer for a while. Not until it's completely frozen but just icy.

    * If you've never made it before use this recipe as a starter. But the real beauty of fried rice is that you don't need a recipe.
