    Garlicky Pork w/ Basil

    List of Ingredients

    3/4 pound lean pork tenderloin
    1 teaspoon vegetable oil (or use broth or cooking spray)
    1/4 cup chopped fresh or
    1 tablespoon plus
    1 teaspoon dried basil
    1/4 cup chicken broth
    1/8 teaspoon ground red pepper -- (cayenne)
    4 cloves garlic crushed

    Recipe

    Trim fat from pork tenderloin. Cut pork crosswise into 8 pieces. Flatten each piece of pork to 1/4-inch thickness between waxed paper or plastic wrap. Cook pork in oil (or use broth or cooking spray) in 10-inch nonstick skillet over medium-high heat about 3 minutes, turning once, until brown. Stir in remaining ingredients. Heat to boiling; reduce heat. Cover and simmer about 5 minutes or until pork is done.

    MICROWAVE DIRECTIONS: Omit oil. Prepare pork as directed. Place pork in rectangular microwavable dish, 13 x 9 inches. Mix remaining ingredients; pour over pork. Cover tightly and microwave on high 4 to 6 minutes, rearranging pork after 2 minutes, until pork is done.
