    Pineapple Sweet & Sour Pork

    can use chicken breast in place of the pork if desired

    List of Ingredients

    3 boneless lean pork chops or Chicken Breasts
    1.5 C Chopped fresh pineapple
    1/2 C sliced carrots
    1/2 C Sliced Red Bell Peppers
    1/2 C Sliced Green Bell Peppers
    1/2 C Sliced Onion
    4 T Splenda
    1/2 C Cider Vinegar
    2 T Lemon Juice

    Recipe

    Cube and Saute' Pork Chops/Chicken Breasts in a little water. Remove when done and add a little more water to "deglaze" the pan. Add carrots, onions and peppers and saute' until just done. Add 1 C Pineapple, cover and reduce heat. Meanwhile in a chopper/food processor/blender, chop or blend the remaining ingredients (vinegar, lemon juice, splenda, and .5 C pineapple) until smooth. Taste the sauce to make sure that it is sweet and sour enough. If it is too sweet, add more vinegar, if it is too sour, add more Splenda. Return chicken/pork to the pan with the vegetables and top with sauce. Heat to simmering and serve with rice.
