    Pork Tenderloin Diane

    List of Ingredients

    1 pound pork tenderloin, cut in 8 crosswise pieces
    2 teaspoons lemon pepper
    1 tablespoon lemon juice
    1 tablespoon worcestershire sauce
    1 teea dijon mustard
    1 tablespoon fresh chives or parsley, minced

    Recipe

    Place each piece of tenderloin between 2 pieces of plastic wrap. Flatten slightly with heel of hand. Sprinkle surfaces of medallions with lemon pepper. Heat a heavy skillet that has been sprayed with cooking spray. Cook medallions 3-4 minutes on each side. Remove to serving platter and keep warm. Add lemon juice, worcestershire and mustard to the skillet. Coo, stirring with pan juices, until heated through. Pour sauce over medallions. Sprinkle with chives or parsley. Yields 8 portions of protein C (1 3/4 oz. each)
