Sweet-and-Sour Pork

List of Ingredients
1/4 cup unsweetened pineapple juice
1 tablespoon cornstarch (off plan ingred.)
2 tablespoons brown sugar or brown sugar twin
2 tablespoons chopped fresh cilantro
2 tablespoons white vinegar
1 tablespoon low-sodium soy sauce
1/4 teaspoon crushed red pepper
1/2 pound lean boneless pork loin
1/4 teaspoon garlic powder
Vegetable cooking spray
1/2 teaspoon vegetable oil (or use broth for stirfry step)
1/4 cup chopped onion
1 cup red bell pepper strips
1/2 cup coarsely chopped green bell pepper
1/2 cup sliced zucchini
1 cup coarsely chopped fresh pineapple
2 cups hot cooked rice cooked without salt or fat Recipe
Combine first 7 ingredients in a small bowl; stir well, and set aside.
Trim fat from pork; cut into 1-inch pieces.
Sprinkle garlic powder over pork. Coat a wok or large non stick skillet with cooking spray; add oil, and place over medium-high heat until hot. Add pork; cook 3 minutes or until pork loses its pink color. Add onion; stir-fry 1 minute. Add bell peppers and zucchini; stir-fry 3 minutes or until crisp-tender. Stir in pineapple juice mixture and fresh pineapple; cook 30 seconds or until thickened, stirring constantly.
