Baked Potato Toppers

I sauté together a couple of mushrooms (sliced), some thin sliced onion and a little green pepper (or any color pepper) - once it starts to brown and the pan is hot add a little low sodium chicken or veggie broth - it will help caramelize the veggies and make them moist - pinch your baked potato open and spoon on the mixture.
You can change the veggie mix easily - and it make a nice change - I've used this on top of baked sweet potatoes too - and it was very good - just thought this might help add some variety to your meal - it may be in the recipes already - I haven't gotten all the way thru all of them - and they are all free veggies - so you can have lots if you want! It adds a little variety at least.
