    Baked Sweet Potato Puree w/ Fresh Ginger

    3 lrg sweet potatoes cut into 2-inch pieces
    1 tsp grated fresh gingerroot
    1/2 tsp ground cinnamon
    1/2 tsp ground nutmeg
    1 tsp finely grated lemon peel
    2 tbl fresh orange juice

    Recipe



    * Preheat oven to 350 degrees. Lightly spray 1-quart baking dish with nonstick cooking spray. In large pot fitted with steamer basket, steam sweet potatoes until tender, about 15 minutes. When cool enough to handle, remove skins, puree sweet potatoes in blender or food processor with remaining ingredients until smooth and thick.
    * Turn mixture into baking dish; bake 20 minutes.
