3 Lg Sweet Potatoes Unpeeled, Cut In 1/2" Slices
8 Sm Red Potatoes Unpeeled, Halved
1 Tbsp Olive Oil (or use cooking spray)
Freshly Ground Black Pepper
Recipe
Preheat oven to 400 deg F. Place sweet potatoes and red potatoes on an ungreased baking sheet. Lightly brush tops with olive oil (or spray with cookign spray) and sprinkle with pepper. Bake until soft and lightly browned, about 30 - 40 minutes. Place in a serving dish.
