2 pounds red potatoes, diced (3 cups worth)
1/4 cup celery, finely chopped
1/4 cup red onion, finely chopped
2 1/2 tablespoons dijon mustard
1 1/2 teaspoons fresh lemon juice
black pepper to taste
Recipe
Steam potatoes, covered, 10 minutes or until tender. Combine celery and onion in a bowl. Add potatoes and toss to mix. Combine mustard, lemon juice and pepper. Add to potato mixture and toss until well coated. Sprinkle if paprika if desired. Makes 6 portions of: 1/2 cup Carb A and 2 tsp Veg A.
