4 medium baking potatoes, peeled
2 quarts boiling water
6 egg whites
2 scallions, minced
1 tablespoon chopped fresh parsley
1/4 teaspoon ground black pepper
1 cup unsweetened applesauce
1/2 teaspoon ground cinnamon
Recipe
Plunge potatoes into water and blanch for 2 minutes. Drain and allow to stand for 10 minutes. When cool enough to handle, grate the potatoes. (measure potatoes at this point to determine how many servings you will get out of this recipe). Mix together the grated potatoes, egg whites, scallion, parsley and pepper. For each pancake, place 1/4 cup batter onto a nonstick skillet and cook until brown, about 4 minutes on each side. Combine the applesauce with cinnamon and serve with the cooked pancakes as a topping.
Divide total amount of measured potatoes into serving size you are allowed.. entire recipe has 6 oz. protein A, so you may need to adjust protein amount for your meal. The applesauce can count as fruit B or can count as a carb on occasion.
