    Marymay's Roasted Red Potatoes

    List of Ingredients

    5lb bag of Red potatoes (they don't have to be baby reds)
    1/8 cup - 1/4 cup Chicken or Vegetable broth
    1 TBSP Minced Garlic
    1 tsp dried Basil
    1 tsp dried Thyme
    1 tsp dried Oregano
    1 tsp dried Parsley (or 1/2 cup chopped plain fresh parsley)
    1/4 tsp crushed red pepper flakes

    Recipe

    1) Preheat oven to 475 degrees
    2) Wash/clean and dice/cube all of the unpealed potatoes.
    3) In a large bowl, combine potatoes, broth, garlic, basil, thyme, oregano, parsley, red pepper flakes and STIR until potatoes are evenly coated.
    4) Place potatoes in a NON STICK roasting pan or baking sheet.
    5) Roast for 30 minutes; be sure to turn occassionally - approx. every 10 minutes.
    6) Remove from oven and let rest 20 minutes. Divide up into your prescribed serving size; use serving containers and freeze for 'as needed' use. Scumptious!

    *Broth is a subsitute for 1/8 cup of olive oil.
    *You may want to opt to coat your bakeware with nonstick spray.
    *1/2 teaspoon of salt has been omitted.
