1/2 cup red bell pepper strips
1/2 cup green bell pepper strips
1 cup diced onion
1 small clove garlic, minced
1 1/2 cups water
2 packets no sodium instant chicken bouillon
1/8 teaspoon pepper
18 ounces red ptoatoes, scrubbed, thin sliced
Italian parsley
Recipe
Heat a 12" nonstick skillet. Add bell peppers, onions and garlic, and saute until veggies are soft, about 5 minutes. Stir in water, broth mix and pepper, bring to a boil. Reduce heat to low; add potatoes, cover and let simmer, stirring occasionally, until potatoes are tender, about 15 minutes (Add water if needed to prevent sticking). Garnish with parsley sprigs.
