    Potato Goulash

    List of Ingredients

    2 pounds med red potatoes, cut in half lengthwise then cut in 1/4" slices
    1 onion, chopped
    2 cloves garlic, minced
    2 tablespoons sweet paprika
    1 teaspoon caraway seeds
    1 teaspoon oregano
    28 ounces can Italian plum tomatoes in juice broken up
    2 teaspoons bouillon granules
    2 cups cooked barley or other grain of choice

    Recipe

    Combine all ingredients except the grains in a large pot. Bring to a boil, reduce heat and simmer, covered, 30-40 minutes or until the potatoes are tender. Stir occasionally and add water if needed. Serve over whole grains.
