Potatoes w/ Garlic Onion Relish

8 ounces pearl onions, frozen
1 cup vegetable broth
1/4 cup chopped trimmed green onion
1 clove garlic, crushed
2 tablespoons chopped fresh parsley
1/4 teaspoon ground black pepper
1 1/2 pounds potatoes, scrubbed and peeled
Recipe
Combine pearl onions, broth, green onions and garlic in a large saucepan. Bring to a boil, reduce heat, cover and cook for 5 minutes or until vegetables are tender. Uncover and simmer 5 to 10 minutes more, or until nearly all the liquid has evaporated. Stir in parsley and pepper; set aside.
Meanwhile, cook potatoes in boiling water for 10 to 15 minutes; drain well and let potatoes cool down. Slice potatoes; combine with onion mixture and serve.
