    Red Potato Salad

    List of Ingredients

    * 1/2 cup red wine vinegar
    * 1/2 cup water
    * 3 packets sweetener
    * 2 cloves garlic, minced
    * 1/2 tsp black pepper
    * 1/2 tsp dry mustard
    * red potatoes
    * fresh green beans
    * red onion, chopped
    * cucumber, chopped

    Recipe

    Combine first 6 ingredients, mixing well. Set aside. Boil potatoes with jackets until tender. During last 5 minutes, add green beans and cook until tender crisp. In mixing bowl, add potatoes, cut into bite-sized pieces, green beans, red onion, and cucumber. Toss to mix. Pour dressing over. Mix and let sit in refrigerator until cold and well-marinated. This is even better if left overnight.
