Roasted Mustard Potatoes

4 tablespoons dijon mustard
2 teaspoons paprika
1 teaspoon ground cumin
1 teaspoon chili powder
1/8 teaspoon cayenne pepper
15 small red potatoes
Recipe
Preheat oven to 400¼F. Line a roasting pan with nonstick foil. Whisk together mustard, paprika, cumin, chili powder and cayenne pepper in a large bowl. Prick potatoes several times with a fork and add to the bowl. Toss to coat potatoes evenly. Pour coated potatoes into the prepared pan, leaving space between each potato. Bake 45-60 minutes or until potatoes are fork-tender. Makes 5 portions of 1/2 cup Carb A.
