Shredded Potatoes & Zucchini

2 cups of shredded potatoes (I used Idaho) (will make 4 portions of 1/2 cup carb.)
1 small zucchini, shredded
3 tbl. minced green onion
garlic pepper (or garlic powder and pepper) to taste
butter flavor cooking spray
Recipe
Spray 10 - 12 inch skillet with cooking spray. Heat to medium heat. In a bowl, combine the potatoes with zucchini and onion; season with garlic pepper or any other seasonings as desired. Dump into pan and spread in a thin layer. Continue cooking over medium heat until potatoes start to brown lightly (it may stick to pan -- if it does, you can add a bit of water to help with sticking). Turn the mixture and spread again in thin layer -- brown second side slightly. Cook to desired doneness or crispness. Divide into 4 portions (each will be 1/2 cup carb plus some free veggies).
