Spiced Sweet Potato Cup

1 cup sweet potato
1/4 c Spenda Maple Syrup
1/4 teaspoon ground cloves (more or less to taste)
1/4 teaspoon ginger (more or less to taste)
Recipe
Cook sweet potatoes in crock pot with a little water or a little NS chicken broth (just cover the bottom of pot about 1/2 inch). Cook for a couple of hours this way. Fill a measuring cup with the sweet potato up to the one cup mark, add the Slenda Maple Syrup and spices and mix and mash well. Place in a custard dish or in a giant paper muffin cup. When ready to eat, heat in microwave for 1 minute, then dribble a little more maple syrup on top. Great right before a workout because sweet potatoes keep your blood sugar up naturally!
