    Stir Fried Potatoes & Carrots

    List of Ingredients

    4 medium carrots, peeled and cut into matchstick (about 2 cups worth)
    1/2 cup water, divided
    10 ounces potato, peeled and cut into matchsticks (about 1 cup)
    1/8 teaspoon black pepper
    1 tablespoon fresh chives, minced

    Recipe

    Heat a 10 inch nonstick skillet that has been sprayed with nonstick cooking spray. Ad carrots and cook, stirring for 1 minute. Stir in 1/4 cup water and steam, covered, over moderate heat, shaking pan occasionally, for 3 minutes or until liquid has evaporated. Add potato and remaining water and steam, covered for 3 minutes or until the water has evaporated and the vegetables are just tender. Season with pepper and sprinkle with chives. Makes 2 portions of 1/2 cup Carb A and 1 cup Vege A
