    Sweet Potato Gnocchi w/ Lemon

    List of Ingredients

    3 sweet potatoes
    2 egg whites, beaten until frothy
    1/4 c oat or rice flour
    pinch cinnamon
    1-8 t black pepper
    pinch nutmeg

    1 can low sodium, low fat chicken broth
    2 T fresh chopped cilantro
    1 T lemon juice

    Recipe

    Bake sweet potatoes whole for 1-1 1/4 hours until tender. When cool enough, peel, then mash them in a bowl while they are still warm. Add the egg whites and half the flour. Add cinnamon, pepper and nutmeg. Knead in remaining flour, a little at a time, to form a smooth dough. Roll into 3/4" thick ropes, then cut into 1/2 inch lengths. Place on floured baking sheet and let dry for 1 hour. Poach the gnocchi, a few at a time, in a pot of boiling water fo 4-5 minutes. When they rise to the surface, remove with a slotted spoon and drain. Season with pepper and nutmeg and keep warm. For the sauce, boil the broth, cilantro and lemon. Season with pepper to taste. Arrange the gnocci in a serving bowl and pour the sauce over them.
