    Tex-Mex Potatoes

    List of Ingredients

    2 medium potato quartered and sliced (to 3)
    1 small zucchini sliced
    1/2 medium green bell pepper 1/2 penny sized
    1/2 medium onion sliced
    1 can mushroom stems and pieces optional
    Salsa

    Recipe

    Spray your non-stick frying pan with pam or a similar spray. Do not use oil. If you do not want to use the non-stick frying pan then use your microwave.

    Slice about two or three medium potatoes and then quarter the slices. Slice a small zucchini into slices. Add the potatoes and zucchini to the pan and saute.

    Slice up some green peppers (about 1/2 a good size pepper into 1/2 penny size pieces. Slice up some onions (about the same amount as green peppers. Opt. Add one small can mushrooms (pieces & stems) to the green peppers & onions.

    When the potatoes and zucchini are about 3/4ths done add the green pepper, onions and mushrooms (if used) to the pan and saute the whole thing until done. Serve with spanish rice or whatever else you have and add Lazy Man's Salsa on top.
