Scrub the sweet potatoes and poke holes in them with a fork. Cook in microwave on High until cooked. Usually takes about 10-15 minutes depending on the size and quantity of potatoes.
Scoop out the sweet potato and mash in a food processor. Add Cinnamon and Splenda to taste.
I fix this just about every week. Stays in the refrigerator for a week. Just scoop out a 1/2 cup and you have a carb for your meal.
