Wine-Parsley Potatoes

3 cups sliced red potatoes
1/2 cup dry white wine
1 cup sliced msuhrooms
1 tablespoon chopped fresh parsley
1/4 teaspoon black pepper
1 large tomato, diced
Recipe
Bring 1 inch of water to a boil in a steamer basket. Place potato slices in a colander or steamer basket, cover and steam for 15 minutes or until tender. While potatoes are steaming, heat 1/4 cup of the white wine in a skillet over medium heat. Add mushrooms. Cook and stir for 5 minutes over medium heat. Add more wine if needed during this process. Place warm steamed potato slices, warm mushrooms and any remaining liquid from the skillet, the remaining 1/4 cup white wine, parsley, pepper and tomato in a large bowl, toss and serve.
