Chicken: Baked Chicken with Peppers, Onions & Mushrooms

List of Ingredients
2 boneless chicken breasts seasoned
2 bell peppers sliced
1 large sweet onion sliced
2 cups sliced mushrooms
minced garlic to taste
white wine (I used Chablis and probably not more than a cup)
Recipe
Line a 8x8 or 13x9 pan with foil. Place peppers, onions, mushrooms and garlic in pan. Pour a little white wine on top. Season your chicken breasts with your favorite seasonings and place on top of the veggies. Pour a little more wine on top of chicken. Cover with foil and bake in 350 degree oven for 60 min or until chicken is done.
Serve over 1/2 cup rice.
I made this last night and the chicken was really tender. I used green bell peppers, because the fruit stand didn't have any reds yesterday. Otherwise I probably would have sliced a green, red and yellow (used three instead of two).
