    Recipe Introduction


    "This recipe comes from dlb23 from the Women of Color "Contract Time" thread. I used turkey cutlets cut in strips crosswise from the grain (instead of cutting lengthwise with the meat fibers, you cut across or width wise instead--makes it tender). I find turkey breast to be more flavorful and moister than chicken. This is really good--thanks dlb23! Try packaging 2 ozs individual protein portions or serve with/over your carb. I used minced ginger."

    List of Ingredients




    1 pound chicken breast tenders (nice change from chicken breasts)
    1/4 teaspoon freshly ground black pepper
    1/2 cup sliced onion
    1/2 cup seedless raspberry Simply Fruit or Just Fruit (contains no sugar cause its just fruit!)
    1 tablespoon red wine vinegar
    1 tablespoon low-sodium soy sauce
    1 teaspoon minced ginger (I use ground ginger)
    1/2 teaspoon dried rosemary

    Recipe



    Sprinkle chicken with pepper. In a large nonstick skillet over medium-high heat, add onion, and sauté until translucent. Add chicken to pan; saute until chicken is done. Remove onion and chicken from pan. Add jam and remaining ingredients to pan; cook 2 minutes, stirring constantly with a whisk. Return chicken mixture to pan; cook 4 minutes, stirring occasionally.

    Serving size: 2 ounces chicken and 1 tablespoon sauce
