    Chicken: Apricot Ginger Sweet n' Sour Chicken

    List of Ingredients

    * 1 can lite apricots, drained and rinsed
    * 1/2 tsp dry mustard powder
    * 1 tsp fresh grated ginger
    * 3 tbsp Splenda, or to taste
    * 1-2 tbsp rice wine vinegar
    * 1 tbsp cornstarch mixed in a little water
    * cooked chicken breasts

    Recipe

    Put all ingredients except cornstarch**/water into a food processor and whir until pureed. Transfer to a saucepan and heat on the stove over medium until bubbly. Add cornstarch/water mixture and heat until thickened. Use as a topping over cooked chicken breasts.
