List of Ingredients
4 chicken breast halves
1 tablespoon Dijon mustard
1 tablespoon butter
1/2 cup salsa
2 tablespoons lime juice
1/4 cup cilantro -- choppedRecipe
Pound each breast between breasts of plastic wrap to a uniform thickness of 1/2 inch. Spread both sides with mustard. In large skillet, melt butter over medium heat. Add chicken and cook 3-4 minutes on each side. Stir salsa and lime juice together and add to skillet. Simmer gently, uncovered, until chicken is cooked through and sauce has thickened, about 6-8 minutes. Sprinkle with chopped cilantro.
Lisa's Notes to make plan friendly: This recipe can work with some prep ahead of time.
1. Either use no salt added dijon mustard (Temeraire) or use 1 teaspoon dry mustard powder and rub into chicken.
2. Do not saute them in butter. Either brown over high heat in a non stick skillet, or use non stick spray (not plan recommended).
3. Make your own salsa, find a recipe in the recipe exchange or find one with no salt added.
