Chicken: Balsamic Glazed Chicken

6 boneless skinless chicken breast halves
1 T vegetable oil (or use cooking spray or broth)
1/2 tsp pepper
3 garlice cloves chopped
1 1/2 T tomato paste
1/2 c chicken stock
2/3 c balsamic vinegar
1 T honey
4 T green onions (scallions) thinkly sliced Recipe
In a large fry pan, heat oil over med high heat (or use cooking spray or broth). Add chicken and cook turning and sprinkling pepper equally on each side of chicken, about 10 min or until slightly brown on all sides. Remove chicken from pan and drain off any excess oil. Add garlice to pan, saute over med heat for 2 min. Stir in tomato paste and slowly add chicken stock, scraping to dissolve any bits clinging to bottom of pan. Increase heat to med heat, add vinegar and honey and rapidly boil for 3 min to reduce liquid to one cup. Return chicken to pan, reduce heat to med. Cook turning about 30 min or until liquid thickens and becomes a dark mahognany glaze and chicken is done.
