Chicken: Bethany's Chicken Curry

in a non-stick pan saute
1 onion
2 cloves of garlic, pressed
some ginger (honestly I don't know how much I use) maybe 1 tsp.
i use some low sodium chicken broth when I do this
add 4 chicken breasts cut in 1 inch chunks and then saute this until chicken is cooked
add 1 1/2 cups chicken broth (low sodium of course)
2 T. curry powder or more. I put a lot
1 tsp ground corriander
cover and let simmer for 20 minutes or so.
I make tons of this at once and a huge pot of rice then I eat it all week.
