chicken breasts sliced in long strips
egg whites (beaten, add some of the following spices...only if you want a stronger taste)
dash of black pepper
dash of garlic powder
dash of onion powder
dash of paprika
parsley flakes
Mrs Dash spice
1/2 cup oatmeal milled to flourRecipe
After grinding the oatmieal to a flour add of all the spices to the flour. Dip the chicken strips into the beaten egg white. Coat the dipped chicken into the flour mix to cover. Place onto teflon cookie sheet (or use a very small amount of Pam to a regular cookie sheet). Bake at 350-375 for about 20 minutes or to crispness.
I usually make a big batch, let it cool, weigh out my allowable amount and zip-lock them. It's a quick grab if you have to rush out the door last minute and need a snack meal. I find it can be eaten cold or reheated. It goes even better with a little salsa since it tends to be a little dry (if you over cook it like I do sometimes). So adjust the heat and time to your oven.
