Chicken: Chicken Breast Baked in a Bag
Source of Recipe
From member vileon: Here is a modified recipe from FoodTV's Jamie Oliver, The Naked Chef
List of Ingredients
1 chicken breast, scored
1 medium sized new potato
small glass of white wine
1 handful of mushrooms
2 cloves of garlic
pepper
fresh thyme
1 egg
aluminum foil
Recipe
Preheat oven to 450¡. Quarter potato into approximately 1 inch thick pieces. Put all ingredients in a bowl and mix.
Beat egg and set aside. Take a long piece of aluminum foil (about 32 inches long) and fold it in half. Brush all four edges with egg wash and fold the foil in half again creating a double thick bag with a closed end. Fold the side edges over twice, creating two sealed edges and leaving one side open.
Place mixture into aluminum foil, adding chicken last and including all liquid. Do not pierce the foil.
Close up the final edge of the bag making sure it is tightly sealed and secure on all sides. If needed, use the egg wash as glue. Slide it onto a baking tray and bake in middle of oven for 25-30 minutes. The foil should puff up, don't worry, it won't pop.
Remove from oven, place bag on plate and break open to serve.
