* 1 lb chicken breasts
* 2 cups sliced mushrooms
* 2 cups chopped bell peppers
* 3/4 cup chopped onion
* 3 garlic cloves, minced
* 1-16 oz can whole tomatoes, undrained and coarsely chopped
* 3/4 cup tomato juice
* 1/2 cup water
* 1/4 cup tomato paste
* 1 tbsp sugar substitute
* 2 tsp dried rosemary
* 1 tsp dried basil
* 1 tsp dried oregano leaves
* 1/4 tsp black pepper
* cooked rice or rice noodles
Recipe
Spray a large nonstick skillet or Dutch oven with cooking spray**; heat over medium heat until hot. Cook chicken 3-4 minutes or until browned on all sides.
Add mushrooms, bell peppers, onion, and garlic to pan; cook and stir 3-4 minutes. Add remaining ingredients (except rice or noodles) to pan; heat to a boil. Reduce heat to low and simmer, uncovered, about 30 minutes or until chicken is no longer pink in center. Serve over rice or rice noodles.
