From member WorkinIt: I did some experimenting with a modified Chicken Dijon and it came out FABULOUS!!! This would be something I would even serve to company and I bet they wouldn't even know it was "diet" food!! If you're on living lean, this would be better with capers in it.
List of Ingredients
* dijon mustard
* chicken breasts, skinned and boned
* 1 cup chicken broth
* 1 cup dry white wine
* 1 cup chopped mushrooms
* fresh greens of your choice, such as spinach
* 1/2 tsp of the dijon mustard
* paprika
* lemon pepper
* 2 tbsp unflavored rice milk
* rounded half-teaspoon of arrowroot
Recipe
Rub some dijon mustard on chicken breasts. Place in baking dish, cover lightly with foil and bake in oven until cooked through.
Combine chicken broth and dry white wine and put in a nonstick frypan. Add chopped mushrooms and greens you have around (I used spinach, but you could use fresh parsley or whatever). Season with about 1/2 teaspoon of the mustard, paprika, lemon pepper and any other seasonings you like. Cook over medium heat until reduced by about half.
Just before serving, add unflavored rice milk and remove from heat. While still removed from heat, thicken with arrowroot which has been dissolved in just enough broth or water to make it soupy. Pour the sauce over the baked breasts.
Serving idea: I served it with sticky rice and asparagus.
