Chicken: Chicken Fajitas

From member eastwababe: I am really missing Fajitas and with the whole pancake discussion...here's what I tried.
List of Ingredients
* 1/2 cup oatmeal, ground into flour
* 1 egg white
* 1/4 cup water
* 1/2 tsp garlic powder
* 1 tsp dried onion
* 1 tsp Italian seasoning
* 1 tbsp tomato sauce
* chopped, cooked chicken
* red, green and yellow bell peppers, cut in strips
* red onion, sliced
Recipe
Mix oatmeal flour, egg white, garlic powder, dried onion, and Italian seasoning. Add water a little at a time until batter is thin but not runny. Pour onto hot griddle. Cook 1-2 minutes on first side, flip and cook second side. While cooking second side, cover the cooked side with 1 tbsp tomato sauce. Cook chicken, peppers, and red onion just until warmed through and serve in "tortilla". Warning: the tortilla is less flexible than a flour tortilla, so wrap while it's still warm, or on the griddle, for best results.
