    Chicken: Chicken Fried Rice 2

    List of Ingredients

    * 1 lb chicken or turkey, cooked and cubed
    * 4 cups cooked white rice, cooled
    * 2 cups chopped vegetables (your favorites)
    * 1 cup chopped onions
    * 2 tbsp fresh ground pepper
    * 1/2 tsp ginger
    * 4 tbsp salt-free chicken broth
    * 2 tsp curry powder
    * 1 egg white, scrambled

    Recipe

    Combine chopped onions with 1 tbsp chicken broth. Saute until tender, adding second tablespoon of chicken broth as it cooks down. Add spices and meat and stir fry for 3 minutes. Add rice, remaining chicken broth and scrambled egg and mix until heated through (about 5 minutes.)
