Chicken: Chicken Medallions

1 1/2 �cups mushrooms
2 �tablespoons grated peeled carrots
2 �tablespoons chopped peeled onions
2 �tablespoons chopped celery
1 � chopped tomato
1 1/2 �teaspoons lemon juice
1/8 �teaspoon dried crushed thyme
1/8 �teaspoon ground black pepper
4 � (4-6oz.ea) fresh boneless, skinless chicken breasts
1/8 �teaspoon black ground pepper1 �teaspoon lemon juice
1/8 �teaspoon dried crushed thyme
1 � MAGGI Chicken Bouillon Cubes (or low-salt equivalent)

In a medium skillet, cook mushrooms, carrot, onion and celery in a small amount of boiling water for about 5 minutes. Drain. Stir in tomato, lemon juice, thyme and pepper.
Pound chicken breasts until 1/8-inch thick. Sprinkle with pepper. Divide vegetable mixture between chicken breasts, fold in the sides, and roll up. Secure with wooden toothpicks.
Spray a medium skillet with vegetable cooking spray. Brown over medium heat for 3 to 4 minutes, turning occasionally. Add lemon juice and thyme, chicken bouillon cube and water. Cover and simmer about 15 minutes or until the chicken is done.
