    List of Ingredients




    1 1/2 Êcups mushrooms
    2 Êtablespoons grated peeled carrots
    2 Êtablespoons chopped peeled onions
    2 Êtablespoons chopped celery
    1 Ê chopped tomato
    1 1/2 Êteaspoons lemon juice
    1/8 Êteaspoon dried crushed thyme
    1/8 Êteaspoon ground black pepper
    4 Ê (4-6oz.ea) fresh boneless, skinless chicken breasts
    1/8 Êteaspoon black ground pepper1 Êteaspoon lemon juice
    1/8 Êteaspoon dried crushed thyme
    1 Ê MAGGI Chicken Bouillon Cubes (or low-salt equivalent)
    1/2 Êcup water

    Recipe



    In a medium skillet, cook mushrooms, carrot, onion and celery in a small amount of boiling water for about 5 minutes. Drain. Stir in tomato, lemon juice, thyme and pepper.

    Pound chicken breasts until 1/8-inch thick. Sprinkle with pepper. Divide vegetable mixture between chicken breasts, fold in the sides, and roll up. Secure with wooden toothpicks.

    Spray a medium skillet with vegetable cooking spray. Brown over medium heat for 3 to 4 minutes, turning occasionally. Add lemon juice and thyme, chicken bouillon cube and water. Cover and simmer about 15 minutes or until the chicken is done.
