    Chicken: Chicken Pizza

    From member lookintolose: I was craving pizza the other night, so I started experimenting after reading several posts. Here's what I came up with. The crust is crunchy and so yummy! This makes the perfect size personal pan pizza.

    List of Ingredients

    * 1 egg white, beaten until frothy
    * 1/4 - 1/2 cup oat flour
    * garlic powder, to taste
    * mushrooms
    * green peppers
    * onions
    * tomato paste
    * Mrs. Dash Herb and Garlic
    * chicken

    Recipe

    Combine beaten egg white with oat flour and garlic powder. Mix by hand, adding water if necessary. Heat a non-stick skillet until very hot. Spray lightly with cooking spray**. Pour flour mixture into pan. Cook until brown, then flip and cook other side until brown. Cool on wire rack.

    Meanwhile, saute mushrooms, bell peppers, and onions for a few minutes. Mix tomato paste with Mrs Dash and spread on crust. Top with vegetables and chicken. Put on wire rack and bake in 400¡ oven for 10 minutes.

    Original poster's notes: When I made the pizza dough I wisked the eggs first then I added oat flour, then gradually added a little bit of water until the dough was the consistency of pancake batter. After I cooked it on the pan like a pancake the consistency wasn't crisp but it was more like a dense pancake.

    I added onion powder in addition to garlic powder to the crust

    I added some fresh garlic to the vegetable mixture

    I used garlic spray (pure garlic juice in a pump sprayer) while sauteeing the veggies.
