    Chicken: Chicken Stew a la Chipotle

    1 pound boneless, skinnless Chicken breast
    6 cups salt-free or low sodium chicken broth
    1 onion, diced
    2 canned chipotle chilies or reconstituted dry
    1 (14.5 ounce) can diced tomatoes
    parsley to taste
    1 tsp Mrs. Dash Table Blend

    Recipe



    1. Bring chicken breast, broth, and onion to a boil in a large kettle. Cover and reduce heat. Simmer until chicken is cooked, 8 to 10 minutes.

    2. Remove chicken from broth. Once cooled enough to Handle, tear meat into fine shreds.

    3. Cut out and discard chili seeds and veins. Finely chop chilies.Try to use gloves when doing this...and wash hands when done because they are extremely hot.

    4. Add tomatoes undrained, then chilies to taste. Bring to a boil over high heat, stir often. Reduce heat and simmer about 5 minutes. Add Chicken and stir just until hot, 1 to 2 minutes.

    5. Ladle into wide bowls. Garnish with Parsley
