    Chicken: Chicken Stroganoff

    Recipe Introduction

    From member mShell: My all time favourite dish USED to be Beef Stroganoff with sour cream etc. I decided to try something a little lighter and came up with this recipe.

    List of Ingredients

    1 onion, sliced or diced
    1-2 garlic cloves, crushed (or 1 tsp minced)
    3 skinless chicken breasts, cut into strips
    2 level tbsp no-salt added tomato paste
    1 level tbsp paprika
    1-1/2 cups low-sodium chicken broth
    3 cups sliced mushrooms

    Recipe

    Saute onion and garlic until onion softens. You can use a little broth, spray the pan with cooking spray, or start them on low until onions start to sweat then turn the heat up.

    Add chicken and cook until lightly brown. Add paprika and tomato paste and stir until chicken is coated. Add the broth/stock and then the mushrooms. Bring to a boil and let simmer for about 15 minutes or until sauce is thickened.
