Chicken: Chicken, Wine & Mushrooms

List of Ingredients
2-4 chicken breasts
1/2 bottle Marsala cooking wine (cooking wine is in small bottles and can be found by the vinegar)
1 can low sodium chicken broth
1/2 can no sodium added tomato sauce
2-3 cloves garlic crushed (depending on your personal taste)
1-8oz package of fresh mushrooms, sliced
2 green bell peppers cut into approx. 2" square pieces
1 medium sized onion cut into approx. 6 wedges
A small bit (less than 1 tsp.) of corn starch
A few shakes (to taste) of cracked (or crushed) red pepper
Recipe
Pour wine and chicken broth in pan and heat. Add corn starch (for thickening) Add garlic, tomato sauce and chicken breast. ÊSimmer chicken breast for 10-15 minutes on each side in the sauce mixture. ÊAdd mushrooms. ÊCook for another 10 minutes or so. ÊCheck chicken to make sure it is nearly done. ÊIf it is, add peppers, onions and cracked red pepper. ÊCook for another 5-10 minutes or until peppers and onions are tender, and chicken is done (of course!). ÊServe over rice or potato. Ê
