2 leeks, sliced and rinsed
6 boneless skinless chicken breast halves
(original recipe called for 4 ears corn )
1 large carrot, shredded
2 tomatoes, coarse chopped
2 teaspoons chopped fresh oregano
1 teaspoon chopped fresh thyme
(original recipe called for 1/2 teaspoon salt )
1/4 teaspoon black pepper
1 clove garlic, crushed Recipe
Place leeks on bottom of slow cooker. Top with chicken. (Cut corn kernels off the cobs and sprinkle corn over chicken). Layer carrot over chicken. Combine tomatoes, oregano, thyme, (salt), pepper, and garlic in a small bowl. Spoon into slow cooker. Cover and cook on LOW about 5 hours or until chicken is tender.
