    Chicken: Chicken & Vegetable Kabobs

    List of Ingredients

    3/4 tsp dried oregano
    1/2 tsp dried rosemary
    1/4 tsp freshly ground black pepper
    1/4 tsp ground allspice
    3/4 lb skinless, boneless chicken breast, cut into 2" pieces
    1 red bell pepper, cut into 2" squares
    1 green bell pepper cut into 2" squares
    1 red onion, cut into 2" chunks
    8 oz can no-salt-added tomato sauce
    1/2 tsp grated orange zest
    1/4 tsp cinnamon

    Recipe

    Preheat broiler or prepare grill. In large bowl, combine 1/2 tsp oregano, rosemary, black pepper, allspice. Add chicken, bell peppers, and onion, toss to coat thoroughly. Let stand while you prepare the basting sauce.

    In small bowl, combine tomato sauce, orange zest, cinnamon, remaining 1/4 tsp. oregano, rosemary, and stir to blend.

    Alternately thread the chicken, bell peppers, and onion on 8 skewers. Brush the kabobs with some of the basting sauce and broil or grill 5" from the heat for about 8 minutes, turning once halfway through cooking time, and basting occasionally with the remaining sauce, or until the chicken is just cooked through. Place the kabobs on 4 plates and serve.
