    Chicken: Chicken in Lime

    List of Ingredients




    1 pound boneless skinless chicken breasts, about 3
    1 cup chopped onion
    1 garlic clove minced
    1/2 teaspoon ground cumin
    1/2 teaspoon coriander crushed
    1/4 teaspoon turmeric
    1/8 teaspoon cayenne pepper
    2 tablespoons low sodium soy sauce
    2 limes

    Recipe



    Trim all visible fat from chicken breasts. Heat a non-stick skillet over medium heat until hot. Away from the heat, coat with cooking spray. Add breasts, onion, and garlic. Saute until breasts are browned, about 8 minutes, turning once. Add seasonings and soy sauce. Reduce heat; cover; cook until chicken is fork tender and no longer pink, about 15-20 minutes.

    Cut one lime in quarters; halve the other. Place chicken on serving dish; top with the sauce from the pan; sprinkle with juice from the halved lime (about 2 Tbsps). Serve with the lime quarters.
