Chicken: Chicken w/ Apple Salsa

1 pound chicken breasts
1 lemon
1/2 teaspoon black ground pepper
1 tablespoon dark brown sugar
1 cup chili sauce (see recipe)
1 cup apple, cored and chopped
Recipe
Preheat broiler. Place chicken on a broiler pan; place 6 inches from the heating element. Squeeze juice from lemon over chicken evenly; sprinkle with pepper. Broil, turning periodically (about 25 minutes) until chicken is cooked thoroughly.*
Meanwhile mix brown sugar and chili sauce in a non-stick saucepan. Place over medium heat, add apples; cook 10 minutes, stirring occasionally. Spread evenly over the chicken, then broil for 2 minutes. Remove to a warm platter and serve.
*Chicken Test for Doneness (per Washington Fryer Commission, 1994)
No matter what method you use for cooking chicken, the most accurate test for doneness is a meat thermometer. Since chicken is never ready to be served unless it is done, always be sure it is completely cooked. Whole or bone-in chicken should reach an internal temperature of 180 degrees, and boneless chicken should be cooked to 165 degrees.
