Chicken: Chicken w/ Ginger & Snow Peas

6 ounces fresh snow peas (about 2 cups)
1/2 cup low salt chicken broth
1 tablespoon cornstarch
1 tablespoon low salt soy sauce
1 teaspoon pepper
1 1/4 pounds boneless skinless chicken breast tenders
2 medium cloves garlic, minced
1/2 teaspoon minced gingerroot
1 to 2 tbl. chicken broth Recipe
Buny's note: the cornstarch and soy sauce are off program ingredients.
Trim ends off snow peas. In small bowl, whisk together broth, cornstarch, soy sauce and pepper. Heat a work or large heavy nonstick skillet over high heat. (original recipe calls for 2 tsp of oil to be added and swirled to cover skillet at this point, but may wish to substitute cooking spray or chicken stock). Cook chicken for 4-5 minutes, stirring frequently. Add snow peas, garlic and gingerroot. Cook for 2-3 minutes, stirring constantly.
Add chicken broth mixture and cook for 2-3 minutes, or until sauce thickens and chicken is no longer pink in the center, stirring constantly. If the mixture begins to burn, remove wok or skillet fromheat temporarily, or add 1-2 tbl. broth or water.
