Chicken: Chicken w/ Peppers

List of Ingredients
2 large Chicken breasts
1 Large onion
1-2 cloves of garlic
1 each--green, red and yellow pepper
2 cups mushroomRecipe
In a large non-stick pan, sauté onion. Add garlic and peppers. Cook until slightly tender, you can cook them longer, but they will be slightly wilted.
Add mushrooms and cook until done. Remove from pan, sauté chicken breasts (or if you have already cooked chicken, reheat in microwave) until done. When chicken is done, add peppers and mushrooms. Reheat quickly to warm. This can look very festive arranged on a platter with rice and hardly looks like diet food!
