    Chicken: Chicken w/ Salsa & Peppers

    List of Ingredients




    4 Chicken breasts - skin removed
    Large jar of fat-free salsa (or your own home made)
    1 bag of frozen peppers (Birds Eye has a great mix of red, yellow and green)
    Large yellow onion, chopped
    Chopped garlic, 1 tsp
    Cracked peppercorns, 1/4 tsp or to taste
    Cumin, 1 tsp

    Recipe



    Rub cumin on chicken breasts. Saute the chicken for a few minutes in a non-stick pan until lightly brown. Add onion, garlic and peppercorns. Saute until tender. Pour salsa and peppers over chicken. Cover and simmer on medium heat for about 20-30 minutes until chicken breasts are tender. Serve over rice.
