    Chicken: Chicken with Spanish Rice

    2 lbs boneless, skinless chicken breast
    1/2 tsp paprika
    8 ozs uncooked rice
    1/2 cup scallions
    1 and 1/2 cups of no or low sodium chicken broth
    1 cup canned no salt tomatoes
    2 tbls chopped parsley
    1/8 tsp of ground saffron or tumeric
    1/8 tsp of black pepper
    1 and 1/2 cups of green beans, halved
    2 tbls drained, chopped pimiento

    Recipe



    In large non stick skillet over medium high heat warm the pan. Sprinkle both sides of chicken with paprika. Add the chicken to the skillet and cook until golden on both sides, 7 to 8 minutes. Remove the chicken to a dish and cover losely to keep warm.

    Add the rice and scallions to the skillet. Cook stirring frequently, until the rice is golden and translucent, 2-3 mins.

    Stir in the broth, tomatoes, parsley, saffron and pepper. Bring to a boil. Return chicken and any juices that have accumulated in the dish to the skillet. Cover, reduce heat to low and simmer 15 mins, stirring occasionally.

    Stir in the green beans. Cover and cook until the beans are tender, about 15 mins.
