    Chicken: Chili Citrus Chicken

    List of Ingredients




    1 1/2 tsp chili powder (no salt.. see recipe if needed)
    1/2 tsp ground cumin
    1/2 tsp powdered garlic
    1/4 tsp cayenne pepper
    2 fresh boneless skinless chicken breasts
    1/4 cup lemon juice
    1/4 cup lime juice
    1 jalapeno, stemmed, seeded and diced
    1 tsp sugar or equivalent of sugar substitute

    Recipe



    In a small bowl, combine chili powder, cumin, garlic salt and cayenne pepper. Rub onto chicken; set aside.

    Heat a skillet, add chicken (may need to add water or chicken broth or cooking spray to prevent sticking) and cook until brown and tender, 10 to 12 minutes .

    Meanwhile, boil lemon juice, lime juice, jalapeno and sugar in a small saucepan. Spoon over chicken just before serving.

    NOTE: Chicken Test for Doneness (per Washington Fryer Commission, 1994)

    No matter what method you use for cooking chicken, the most accurate test for doneness is a meat thermometer. Since chicken is never ready to be served unless it is done, always be sure it is completely cooked. Boneless chicken should be cooked to 165°F.
