Salad: Cilantro Chicken Salad

3-4 Chicken Breasts
1/4 cup of low sodium chicken broth
2 Roma Tomatos
1 small onion
Fresh Cilantro
1 Lemon
seasonings to taste

Cut partially frozen chicken breast into thin strips and marinate in lemon juice from half the lemon for 30 minutes. Stir fry chicken in LS chicken broth until thoroughly cooked, adding desired seasonings to taste. Dice Roma tomatos, onions and desired amount of Cilantro (I LOVE cilantro so I add lots!). Remove chicken from heat when done and mix all ingredients in a bowl with juice from the other half of the lemon. Cool in refidgerator for a half hour so that all the flavors marinate and blend well. Reheat in a pan or microwave and enjoy
